Happy Leap Day!


What a fun coincidence that Wyatt's turn to take class snack in this month happened to be on Leap Day! This was a perfect theme for an amphibian loving boy.
We brought frog eggs aka green grapes.
To make the tag I just googled frog clipart and added the words, frog eggs. Super easy!
Pond scum aka apple juice. I made the tag by googling lily pad clipart and adding the text. 
Pumpkin bread cupcakes:
2 cups sugar 
1 cup cooking oil (I used half oil and half applesauce)
4 eggs
3 1/2 cups flour (I used 1 cup whole wheat)
2 tsp. baking soda
1 1/2 tsp. salt
1 heaping tsp. cinnamon
1 heaping tsp. nutmeg
1/2 tsp. allspice
2/3 cup water
1 15 oz. can pumpkin
optional: mini semi-sweet chocolate chips

Grease two 9x5x3in loaf pans. 
Beat sugar and oil in electric mixer on medium speed. Add eggs and beat well.
In large bowl combine flour, baking soda, salt, and spices. Alternately add flour mixture and water to sugar mixture beating on low speed after each addition just until combined. Beat in pumpkin. Spoon into pans.
Bake 350 for 55-65 minutes. Cool on wire rack for 10 minutes then remove from pans.

I used a lightly sweetened cream cheese frosting since this is suppose to be a healthy snack. For the face I used scissors to cut marshmallows in slices, added chocolate chips to the sticky part of the marshmallow (with the point cut off), and then piped on a red mouth.
I had to add tongues on some of them! Some of these guys look so goofy! I love them!

To top this day off, Wyatt got to bring his turtle in for show and tell! The kids loved Mikey and Wyatt was beaming as he showed off his pet.

Wyatt's 7th Birthday!

Wyatt wanted a donut cake for his birthday today! I was so happy I didn't have to bake anything for once. Thanks buddy! I got an assortment of donuts at our local donut shop. Yummy!
Wyatt had his best buddies over to play and go get frozen yogurt with. 
He wanted to take these again to share with his classmates. We used chocolate pudding for the top and bottom layers. We used a mixture of softened cream cheese, cool whip, and a little chocolate pudding for the middle layer.  We topped them with sour worms and plastic snakes.

 This is Mikey, Wyatt's favorite birthday gift this year!

Lincoln turns ONE!

Wow, my little man is one today! My sweet friend, Marly did his one year photo shoot also today. We had a lot of fun with this little stinker.
I made the big cupcake cake (Wilton cake pan) for him to smash into but he didn't really enjoy it. He first started by eating the sprinkles using his little elephant finger. 
I put some frosting on his finger to taste but he still wasn't sure he liked it.
I helped him smash his hands into the cake and he really didn't like that. So far my kids are 0 for 4 on liking the cake on their first birthday.
I wanted to share how his photo shoot went. He is known for giving the best scowl faces and today he did not disappoint.
He did have fun playing with the toys and started to lighten up.

We almost got a smile from him here. 
Finally! It took the fancy car to make him smile. He must have a lot of his dad in him.
The only other things that can make him smile are his siblings. He loves them so much!
