Wyatt's Baptism

Turning 8 is a pretty big deal in our family. It's the year you can get baptized in our church. Wyatt chose to do that and we had a great day!

My mom, dad and sister came into town for the occasion. I am so thankful for all their help!
 We had photos taken of Wyatt to use for his invite,  for this welcome table and..
for the dessert table. Wyatt wanted to do a chocolate fountain and have cinnamon rolls since it was mid-morning. We tried to cover up most of the kitchen by using this chalk board as a backdrop. I found the "It's great to be 8" banner here

Angel food cake, pretzels, peanut butter rice crispies, wafer cookie, marshmallows, potato chips and cinnamon bears (not pictured but one of the favorites) for the fountain.
Here is the recipe I used for the peanut butter rice crispies
1 cup sugar
1 cup light Karo syrup
bring to a boil, then add:
1 cup peanut butter
1 cup salted peanuts (or just use crunchy peanut butter and make it a heaping cup full)
Pour this over 3 cups rice crispies and stir
Spread in 9x13 buttered pan 
I usually add this topping if I'm not dipping them in a chocolate fountain:
1 cup semi sweet chocolate chips
1 cup butterscotch chips-combined and melted in microwave and spread over the crispies
My mom added these to the mix. She used this as part of her talk before Wyatt was baptized. They were so delicious dipped in chocolate.

My mom was amazing and made all the cinnamon rolls and muffins.
Cinnamon Rolls:
1/2 cup warm water, 2 Tbsp sugar, and 1 Tbsp yeast. Mix and set aside.
In another bowl, mix vanilla pudding mix (3.5 oz) as directed, then add 1/2 cup butter melted, 2 eggs, 1 tsp. salt. Blend and add yeast mixture. Stir in 6-7 cups flour.
Knead for 4 minutes in mixer. Let rise to double size, punch down, roll out.
Spread butter, 2 cups brown sugar and 4 tsp. or more cinnamon on rolls.
Roll tightly and cut with floss. Rise double the size.
Bake 350 degrees 15-20 minutes.
Frosting:
8 oz. cream cheese, 1/2 cup butter, 1 tsp. vanilla, 3 cups powdered sugar, 1 Tbsp milk
She also made muffins and lemon bars.
Wyatt loved it!
Wyatt was so excited that Mr. Estrada came to support him. He was the first one on his list of people to invite and was thrilled that he actually showed up.
 Wyatt also wanted to invite his Kinder teacher, Mrs. Gurule. When Wyatt invited his whole class I told him not to get too excited because I didn't know if anyone could come. We were so happy that his teachers came. a few of his classmates and our neighbors. What a special day for Wyatt!
